    Homemade extracts

    The other day I came across homemade Lemon extract on a website and today I came across these on this website

    Chocolate Extract

    3 tablespoons cocoa nibs

    1/2 cup vodka or white rum

    1/4 cup water

    Combine ingredients in a jar with a tightly sealed lid. Let sit 6 to 8 weeks in a cool, dark place, shaking every few days or so. Drain extract through a fine sieve to remove solids. 

    Lemon Extract

    2 lemons

    1/2 cup vodka or white rum

    1/4 cup water

    With a vegetable peeler, remove peel from lemons being careful to avoid getting too much of the white pith. Add to a jar with vodka or rum and water, and seal tightly. Let sit 6 to 8 weeks in a cool, dark place, shaking every few days or so. Drain extract to remove solids.
     

    Coffee Extract 

     2 tablespoons crushed coffee beans

    1/2 cup vodka or white rum

    1/4 cup water

    Combine ingredients in a jar with a tightly sealed lid. Let sit 6 to 8 weeks in a cool, dark place, shaking every few days or so. Drain extract through a fine sieve to remove solids.

     Vanilla Extract

    3 vanilla pods

    3/4 cup vodka or white rum

    1/4 cup water

    Split vanilla beans along their length and then slice each in half. Place vanilla beans in a glass jar and pour in alcohol and water. Seal the jar with an airtight fitting lid and let sit for 6 to 8 weeks in a cool, dark place. Shake the jar every few days or so.

    Almond extract

    3 tablespoons ground skinless, blanched almonds

    1/2 cup vodka or white rum

    1/4 cup water

    Combine ingredients in a jar with a tightly sealed lid. Let sit 6 to 8 weeks in a cool, dark place, shaking every few days or so. Drain extract through a coffee filter to remove solids.

     

    Update : from poster on blog he suggest now to use all Vodka over the mixture of water/vodka after using them..

    I have made the vanilla.  I used 3-5 beans, split open longways, vodka, and a teaspoon of sugar, in a 16 oz. glass bottle.  Kept in a dark cupboard and shaken everytime I got into the cupboard.  let it "soak" about 6 months, then started to use it.  Turned out great, a little stronger than store bought, when it got low I added one fresh bean and more vodka.  It has been going for about 5 years now. I keep two bottles, one to use and one to "soak". 

    I tired the lemon extract once, but felt it didn't turn out strong enough.  All my lemons are imported, since they don't grow in Montana, so that might have had something to do with it.  I have a friend in California that makes her own, from lemons grown on her own tree, and it is better than that store bought.  I really think the quality of lemons is what caused the difference.

    I have not however that is why I shared them since others maybe looking for this idea to make their own extract w/ the fruits going into season soon :O)also if you google homemade extracts you get lots of sites w/the same information :O)
